Vegetable Upma

Ingredients

  • 3/4 cup semolina
  • 1 medium onion (chopped)
  • 2 tsp oil
  • 5 French beans (chopped)
  • 1 small capsicum (chopped)
  • 1/2 small cabbage (chopped)
  • 1 small carrot (chopped)
  • 2 dsp groundnuts
  • 1 tsp sprouted green gram dal
  • 1 tsp urad dal
  • 2 green chilies (chopped)
  • 1/2 tsp mustard seeds
  • Few curry leaves
  • 3/4 cup water
  • Salt to taste

Instructions

  1. Soak dal for 2 hours and drain the water.
  2. Chop all vegetables.
  3. Heat 2 tbsp oil, fry groundnuts and semolina separately, then set aside.
  4. Heat remaining oil, add mustard seeds, dals, and sauté onions until golden brown.
  5. Add chopped vegetables and sauté for a few minutes until tender.
  6. Mix in semolina, salt, and pour water, cooking until moisture evaporates and semolina is cooked.
  7. Garnish with groundnuts and chopped coriander leaves.
  8. Serve hot.
