Ingredients

  • 1 1/2 cup rice flakes
  • 1 medium tomato (chopped)
  • 2 tsp oil
  • 1 small capsicum (chopped)
  • 1 small carrot (chopped)
  • 1 small onion (chopped)
  • 1/2 small cabbage (chopped)
  • 6 French beans (chopped)
  • 2 dsp groundnuts
  • 2 green chilies (chopped)
  • 1/2 tsp mustard seeds
  • Few curry leaves
  • Salt to taste

Instructions

  1. Chop all vegetables.
  2. Soak flaked rice in water for 1 minute, then strain and set aside.
  3. Heat 1 tsp oil in a pan, roast groundnuts, and keep aside.
  4. Heat remaining oil, add mustard seeds, curry leaves, and chilies, then sauté onions until golden brown.
  5. Add chopped vegetables and fry until they soften.
  6. Mix in soaked flaked rice, salt, and stir-fry for 1-2 minutes.
  7. Add roasted groundnuts and mix well.
  8. Serve hot.
