A healthy and delicious upma made with jowar and mixed vegetables.

Ingredients
1/4 cup jowar
1/2 cup water (for pressure cooking)
1 tsp oil
1/4 tsp cumin
1/4 tsp mustard
1/2 tsp urad dal
1/2 pinch hing
1/2 small onion, sliced
1 1/2 green chilies, slit
1/2 tsp ginger, chopped (optional)
3/8 cup mixed veggies (beans, carrots, capsicum, methi leaves), chopped
Salt as needed
Instructions
Wash and soak jowar for at least 8 hours. Drain and add 1 cup water, then pressure cook for 2 whistles on medium flame and 1 more whistle on low flame.
Once pressure settles, fluff up the cooked jowar.
Heat oil in a pan, add cumin and mustard, allow them to crackle.
Add urad dal and sauté until golden.
Add chilies, onions, and ginger; sauté until onions turn soft.
Add mixed veggies and sauté for 2 minutes.
Cover and cook until soft. Sprinkle some water if needed.
Add salt and turmeric, mix well.
Add cooked jowar, mix well and sauté for 2 minutes.
Stir in some lemon juice and garnish with coriander leaves. Serve warm.
