Jowar Upma

Ingredients

  • 1/4 cup jowar
  • 1/2 cup water (for pressure cooking)
  • 1 tsp oil
  • 1/4 tsp cumin
  • 1/4 tsp mustard
  • 1/2 tsp urad dal
  • 1/2 pinch hing
  • 1/2 small onion, sliced
  • 1 1/2 green chilies, slit
  • 1/2 tsp ginger, chopped (optional)
  • 3/8 cup mixed veggies (beans, carrots, capsicum, methi leaves), chopped
  • Salt as needed

Instructions

  1. Wash and soak jowar for at least 8 hours. Drain and add 1 cup water, then pressure cook for 2 whistles on medium flame and 1 more whistle on low flame.
  2. Once pressure settles, fluff up the cooked jowar.
  3. Heat oil in a pan, add cumin and mustard, allow them to crackle.
  4. Add urad dal and sauté until golden.
  5. Add chilies, onions, and ginger; sauté until onions turn soft.
  6. Add mixed veggies and sauté for 2 minutes.
  7. Cover and cook until soft. Sprinkle some water if needed.
  8. Add salt and turmeric, mix well.
  9. Add cooked jowar, mix well and sauté for 2 minutes.
  10. Stir in some lemon juice and garnish with coriander leaves. Serve warm.
