Quinoa Upma

Ingredients

  • 1 cup quinoa (rinsed)
  • 1 small onion (chopped)
  • 1 carrot (chopped)
  • 1/4 cup peas
  • 1 green chili (slit)
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 1 tbsp oil
  • Lemon juice (optional)

Instructions

  1. In a pan, heat oil and add mustard seeds and cumin seeds. Let them splutter.
  2. Add chopped onions, green chili, and sauté until golden.
  3. Add chopped carrots and peas and cook for a couple of minutes.
  4. Add rinsed quinoa, turmeric powder, and salt, and mix well.
  5. Add 2 cups of water, cover, and cook on low heat for about 10-12 minutes until the quinoa is tender and the water is absorbed.
  6. Garnish with coriander leaves and squeeze some lemon juice before serving.
